NV Jilly Wine Co. White Wolf of Cumbria Red
The NV (non-vintage) Jilly Wine Co. White Wolf of Cumbria Red is a blend of Merlot, Shiraz and Tannat. Handpicked early, destemmed and wild fermented in stainless steel. The rest of the wine is made up of approximately 18% Tannat from New England, fermented on skins for 10 months and left on lees in neutral oak for 18 months, no sulphur added, bottled unfined and unfiltered.
Jared Dixon's winemaking philosophy is to make sure the wine is a representation of a time and a place, with no tampering or additions.
Jared Dixon manages his own vineyard at Black Mountain which sits at 1360m, it's gotta be one of the highest vineyard in Australia he also sources fruit from Troppers Mountain Tingha and Kurrajong Downs.
