2020 Havilah Petillant Pet Nat
Havilah is there fun, quirky sibling of Ricky Evans' Two Tonne Tasmania. These are wines made with fruit from around the Tamar Valley grown by like-minded vignerons, as opposed to Ricky himself. It means the same feverish dedication to quality is applied to a series of wines that are a little more easily attainable.
The pink Petillant is made from 80% Pinot Noir and 20% Chardonnay. It's kind of traditional in makeup, using classic Champagne varieties, from a region that makes what is arguably Australia's most serious sparkling wine. Except this guy is cloudy and designed to be consumed while maintaining the minimum amount of social distancing possible. A mix of barrel and tank ferment, bottled before it finished, left on lees and disgorged by hand, pretty much to order.
