2019 Domaine de Chassorney Saint-Romain Rouge Sous Roche - Qvevris
Cossard is famous for producing arguably the best natural wines in Burgundy. He has been organic from the outset using homeopathic remedies in place of systemic chemicals and the most diligent winery practices in place of sulphur. These are truly captivating and rare natural Burgundies. They are some of the hardest wines to find in France and are, in many ways, the ultimate insider wines.
The Domaine de Chassorney wines come from Frédéric Cossard’s own vineyards in and around the village of Saint Romain. They may not always have the most famous appellations on the label, but in some ways they represent the purest expression of his craft.

"The Sous Roche comes from fifty year old vines planted in one of the steepest, shallowest parts of Saint Romain. True to site, this is a lively, lean and vertical wine that really blossoms in the glass. I think this is one of Fred's best wines every year and one of the first that he started making - like the Combe Bazin above this has the sumptuous glory of the vintage but also a cool reserve and juicy, mouthwatering acidity. This is both simply delicious and inspiring at the same time, a beauty!"
