The Valette estate is nestled within an 8 hectare plot in South Burgundy, between Mâcon and Beaujolais. Three generations of the family have farmed on this plot, but it was Philippe, the most recent generation, who decided to start farming organically. His traditional wine education in Beaune never discussed organic viticulture so it has been years of reacting, experimenting and committing to tireless work that have now crowned the sites and Philippe himself as one of the godfathers of sustainable agriculture in Burgundy. Their understanding of the indigenous yeasts in this region are unparalleled. His wines, made from Chardonnay, have a soul that often lacks in this region. A depth and delicacy that is drenched in honey, flowers, peaches and often accompanied by well integrated reductive notes. If Philippe were a chanteur, the wines would be his swan song

The 2014 Pouilly-Fuissé is slick, waxy, honey soaked. Oak aged on lees for 30 months, this is a very textural wine. Tell tale Valette acidity and salinity meeting tangelos, pressed flowers and clotted cream. It is concentrated, awash with minerals, staying in the palate for many many hours. Supreme enjoyment.
