Micah Hewitt is a great guy and a bit of an understated rising star in the natural wine world. A gourmet butcher by trade, who would have thought his constant exposure to fine dining and top shelf wine would have led him to where he is today.
The inspiration behind the name Defialy comes from Micah's parents, who would sign each letter or card they wrote to him and his sister, with it when they were growing up. It's an acronym for "Don't ever forget i'll always love you".
Constantly curious and always experimenting, all Micah's wines are unfiltered and unfined, wild fermented with no additions of any kind, just grapes. As he puts it these are "alive wines to be enjoyed now" and we couldn't agree more.
